Apple risotto

Ingredients (2 servings):

  • Rice for risotto160 g
  • Apples200 g
  • Vegetable broth – 1 l
  • White onion – 0.5 (~50 g)
  • Heavy cream – 30 g
  • Parmesan – 20 g
  • Butter (unsalted) – 40 g
  • Extra virgin olive oil – to taste
  • Salt – to taste
  • Black pepper (ground) – to taste

Apple risotto

Ingredients (2 servings):

  • Rice for risotto160 g
  • Apples200 g
  • Vegetable broth – 1 l
  • White onion – 0.5 (~50 g)
  • Heavy cream – 30 g
  • Parmesan – 20 g
  • Butter (unsalted) – 40 g
  • Extra virgin olive oil – to taste

  • Black pepper (ground) – to taste

Instructions

  1. Heat the broth.
  2. In a pan, heat the oil and half of the butter.
  3. Finely chop the onion and sauté it in the pan until it starts to turn translucent.
  4. Meanwhile, peel and dice the apples.
  5. Once the onion is translucent, add the rice and toast it for a couple of minutes, stirring occasionally.
  6. Add the apples to the pan. Pour in two ladles of broth and cook the rice, stirring and adding a ladle of broth each time the liquid is absorbed.
  7. When the rice is cooked, pour in the cream and stir well.
  8. Turn off the heat, then add the remaining butter, grated cheese, salt, and pepper to taste. Mix well to combine.
