Pasta with cherry tomatoes

Ingredients (2 servings):

  • Pasta160 g
  • Cherry tomatoes300 g
  • Garlic – 1 clove
  • Extra virgin olive oil – to taste
  • Salt – to taste
  • Sugar – to taste

Pasta with cherry tomatoes

  • Cherry tomatoes300 g
  • Garlic – 1 clove
  • Extra virgin olive oil – to taste

  • Sugar – to taste

Instructions

  1. Bring a pot of water to a boil for the pasta, and, once it starts boiling, cook the pasta.
  2. Meanwhile, heat a bit of oil in a pan and sauté the garlic clove, peeled and halved.
  3. Wash the cherry tomatoes well and cut them into quarters. Add the tomatoes to the pan, sprinkle with a pinch of salt and sugar, and cook until they soften. If they start to dry out, add a spoonful of pasta cooking water.
  4. When the tomatoes have softened, mash them with a wooden spoon.
  5. At the end of the pasta cooking time, remove the garlic from the pan, drain the pasta, and add it to the tomatoes. Mix well and cook for one minute.
