Strawberry pancakes
Ingredients (4 servings):

Strawberries
– 300 g

Flour
– 200 g

Eggs – 1

Milk – 200 ml

White vinegar (6%) – 2 tbsp

Extra virgin olive oil – 2 tbsp

Sugar – 2 tbsp

Salt – 1/2 tsp

Baking soda – 1/2 tsp
Strawberry pancakes

Baking soda – 1/2 tsp
Instructions
- In a large bowl, combine the vinegar and milk and let sit for 10 minutes.
- Meanwhile, wash and dice the strawberries.
- In another bowl, sift the flour and add the sugar, salt, and baking soda. Mix well.
- After 10 minutes, beat the egg in a small bowl. Add the milk mixture to the egg and mix well.
- Pour the egg mixture into the bowl with the flour, add the olive oil, and stir until the batter is smooth.
- Gently fold the strawberries into the batter.
- Heat a small amount of oil in a skillet and spread it over the surface.
- Spoon the batter into the skillet and cook the pancakes over medium-low heat. When bubbles appear on the surface of the pancake, flip it and cook until golden brown (about 40-60 seconds).
