Strawberry pancakes

Ingredients (4 servings):

  • Strawberries300 g
  • Flour200 g
  • Eggs – 1
  • Milk – 200 ml
  • White vinegar (6%) – 2 tbsp
  • Extra virgin olive oil – 2 tbsp
  • Sugar – 2 tbsp
  • Salt – 1/2 tsp
  • Baking soda – 1/2 tsp

Strawberry pancakes

Ingredients (4 servings):

  • Strawberries300 g
  • Flour200 g
  • Eggs – 1
  • Milk – 200 ml
  • White vinegar (6%) – 2 tbsp
  • Extra virgin olive oil – 2 tbsp
  • Sugar – 2 tbsp
  • Salt – 1/2 tsp
  • Baking soda – 1/2 tsp

Instructions

  1. In a large bowl, combine the vinegar and milk and let sit for 10 minutes.
  2. Meanwhile, wash and dice the strawberries.
  3. In another bowl, sift the flour and add the sugar, salt, and baking soda. Mix well.
  4. After 10 minutes, beat the egg in a small bowl. Add the milk mixture to the egg and mix well.
  5. Pour the egg mixture into the bowl with the flour, add the olive oil, and stir until the batter is smooth.
  6. Gently fold the strawberries into the batter.
  7. Heat a small amount of oil in a skillet and spread it over the surface.
  8. Spoon the batter into the skillet and cook the pancakes over medium-low heat. When bubbles appear on the surface of the pancake, flip it and cook until golden brown (about 40-60 seconds).
