Pasta with cherry tomatoes and stracchino cheese
Ingredients (2 servings):

Pasta
– 160 g

Extra virgin olive oil – to taste

Raw cane sugar – 1 teaspoon

Instructions
- Put a pot of water on to boil for the pasta, and once it starts boiling, add salt and cook the pasta.
- Meanwhile, heat a small amount of oil in a skillet and sauté the peeled garlic clove for a few minutes.
- While the garlic is sautéing, wash the cherry tomatoes and cut them into quarters (larger ones into 6 or 8 pieces).
- Add half of the cherry tomatoes to the garlic in the skillet, sprinkle with brown sugar, and sauté over high heat for a few minutes, stirring often.
- In the meantime, add the remaining cherry tomatoes, along with the stracchino, 2 tablespoons of oil, washed oregano leaves, salt, and black pepper to a blender. Blend everything until smooth.
- When the pasta is cooked, drain it and transfer it to the skillet with the tomatoes. Add the blended sauce. Cook the pasta for one minute over moderate heat, stirring continuously.
- Serve garnished with a few oregano leaves.
