Pasta with arugula pesto

Ingredients (2 servings):

  • Pasta160 g
  • Arugula50 g
  • Pine nuts – 25 g
  • Grated aged cheese – 50 g
  • Garlic – 1 clove (optional)
  • Salt – to taste
  • Extra virgin olive oil – 50 g

Ingredients (2 servings):

  • Pasta160 g
  • Arugula50 g
  • Pine nuts – 25 g
  • Grated aged cheese – 50 g
  • Garlic – 1 clove (optional)
  • Salt – to taste
  • Extra virgin olive oil – 50 g

Instructions

  1. Bring a pot of water to a boil for the pasta, and, once it starts boiling, cook the pasta.
  2. While the water is heating, wash and dry the arugula. Place it in a blender and blend until finely chopped.
  3. Add the pine nuts, grated cheese, a pinch of salt, and a peeled garlic clove, and pour in the oil.
  4. Blend until smooth and creamy.
  5. When the pasta is ready, drain it and mix well with the pesto.
