Instructions
- Bring a pot of water to a boil for the pasta, and, once it starts boiling, cook the pasta.
- While the pasta is cooking, wash the cherry tomatoes and cut them into quarters.
- In a pan, heat a bit of oil, add the cherry tomatoes, a pinch of salt, and a pinch of sugar. Cook over medium heat for 10 minutes, stirring often. You can add a spoonful of pasta cooking water to prevent the tomatoes from burning.
- When the tomatoes are ready, lower the heat. Add the gorgonzola, pour in a couple of tablespoons of pasta cooking water, and let the cheese melt. The sauce should be creamy.
- When the pasta is ready, drain it and add it to the pan with the tomatoes. Toss everything over medium heat for a minute and serve.
