Instructions

  1. Bring a pot of water to a boil for the pasta, and, once it starts boiling, cook the pasta.
  2. While the pasta is cooking, wash the cherry tomatoes and cut them into quarters.
  3. In a pan, heat a bit of oil, add the cherry tomatoes, a pinch of salt, and a pinch of sugar. Cook over medium heat for 10 minutes, stirring often. You can add a spoonful of pasta cooking water to prevent the tomatoes from burning.
  4. When the tomatoes are ready, lower the heat. Add the gorgonzola, pour in a couple of tablespoons of pasta cooking water, and let the cheese melt. The sauce should be creamy.
  5. When the pasta is ready, drain it and add it to the pan with the tomatoes. Toss everything over medium heat for a minute and serve.
