Instructions

  1. Wash the spinach thoroughly and cook it in a large pan with a little water to prevent burning.
  2. Once the spinach is cooked, let it cool and then finely chop it.
  3. Transfer the spinach to a strainer and press it with a spoon to remove excess water.
  4. In a small bowl, beat the eggs.
  5. Sift the flour onto the work surface and make a well in the center. Pour in the beaten eggs and mix with a fork starting from the center.
  6. Add the spinach and begin to knead the dough. It might be a bit difficult at first, but after a few minutes, the dough will become "normal."
  7. When you have a smooth dough, form it into a ball, cover it with plastic wrap, and let it rest for at least 30 minutes at room temperature.
  8. After the resting time, shape the dough as desired. To make lasagna sheets, roll out the dough with a rolling pin until it's 2-3 mm (1/16 to 1/8 inch) thick. Cut rectangles slightly smaller than the base (or half the base) of your baking dish.
