Instructions
- Wash the spinach thoroughly and cook it in a large pan with a little water to prevent burning.
- Once the spinach is cooked, let it cool and then finely chop it.
- Transfer the spinach to a strainer and press it with a spoon to remove excess water.
- In a small bowl, beat the eggs.
- Sift the flour onto the work surface and make a well in the center. Pour in the beaten eggs and mix with a fork starting from the center.
- Add the spinach and begin to knead the dough. It might be a bit difficult at first, but after a few minutes, the dough will become "normal."
- When you have a smooth dough, form it into a ball, cover it with plastic wrap, and let it rest for at least 30 minutes at room temperature.
- After the resting time, shape the dough as desired. To make lasagna sheets, roll out the dough with a rolling pin until it's 2-3 mm (1/16 to 1/8 inch) thick. Cut rectangles slightly smaller than the base (or half the base) of your baking dish.
