Lasagna Bolognese

Ingredients (6 servings):

  • Butter (unsalted) – to taste
  • Parmesan – to taste

  • For the lasagna sheets

  • Flour400 g
  • Eggs – 2
  • Spinach250 g

  • For the Bolognese sauce

  • Ground beef300 g
  • Pancetta150 g
  • Onion – 50 g
  • Carrot – 50 g
  • Celery – 50 g
  • Tomato purée300 g (recipe)
  • White wine – 125 ml
  • Milk – 125 ml
  • Extra virgin olive oil – 3 tablespoons
  • Salt – to taste
  • Black pepper (ground) – to taste

  • For the béchamel sauce

  • Milk – 1000 ml
  • Butter (unsalted) – 100 g
  • Flour100 g
  • Nutmeg – to taste
  • Salt – to taste

  • For the béchamel sauce

Instructions

  1. Using the quantities of ingredients mentioned above, prepare the Bolognese sauce, lasagna sheets, and béchamel sauce.
  2. Butter the lasagna dish.
  3. Bring a large pot of lightly salted water to a boil. Cook each lasagna sheet in the boiling water for about 40 seconds, then use a slotted spoon to transfer it from the water to a clean towel. Gently pat the sheet to remove excess water.
  4. Cover the bottom of the dish with a layer of lasagna sheets.
  5. Spread a layer of Bolognese sauce over the sheets, followed by a layer of béchamel sauce.
  6. Sprinkle with grated Parmesan cheese.
  7. Repeat steps 4-6 until you reach the edge of the dish.
  8. Top the last layer with cheese and add a few small knobs of butter.
  9. Bake your lasagna in a preheated oven at 180°C/350°F for 30 minutes (25 minutes at 160°C/320°F if using a ventilated oven).
