Instructions:

Sift the flour onto your work surface, add the salt, and mix well.

Make a well in the flour and pour in a bit of water. Start kneading, gradually adding enough water.

Knead for about 10-15 minutes until the dough becomes smooth and homogeneous. If it’s too dry, you can add a bit more water.

Shape the dough into a ball, cover it with plastic wrap, and let it rest for at least 30 minutes at room temperature.

Now proceed with shaping the pasta.

You can make cicatelli: take small portions of the dough and roll them into tubes about 5-7 (1/4 inch) mm thick. Cut the tubes into 4 cm (about 2 inch) pieces. With the help of your fingers, gently drag them towards you to create a hollow, rolled shape. Dust your cicatelli with semolina to prevent them from sticking together.

Cook the pasta in salted boiling water (it will take 5-10 minutes, depending on the thickness).
