Stuffed quail eggs

Ingredients:

  • Quail eggs8
  • Champignon mushrooms50 g
  • Onion – 20 g
  • Garlic – 1 clove
  • Mayonnaise – 20 g
  • Extra virgin olive oil – to taste
  • Curry – to taste
  • Salt – to taste
  • Chives – for decoration

Stuffed quail eggs

Ingredients:

  • Quail eggs8
  • Champignon mushrooms50 g
  • Onion – 20 g
  • Garlic – 1 clove
  • Mayonnaise – 20 g
  • Extra virgin olive oil – to taste
  • Curry – to taste
  • Salt – to taste
  • Chives – for decoration

Instructions

  1. Boil the quail eggs for 4 minutes, then cool and peel them.
  2. Heat a small amount of oil in a pan and sauté the peeled garlic clove for a couple of minutes.
  3. Meanwhile, finely chop the onion. Add it to the pan and cook over low heat until translucent.
  4. While the onion is cooking, clean the mushrooms, wash them, and pat them dry with a clean cloth. Finely chop the mushrooms and add them to the pan with the onion. Season with salt and sauté over medium heat, stirring occasionally and adding a bit of water if necessary to prevent burning (about 15 minutes).
  5. Meanwhile, cut the eggs in half, remove the yolks, and place them in a bowl. Mash the yolks with a fork.
  6. When the mushrooms are cooked, remove the garlic and add the contents of the pan to the bowl with the yolks. Add mayonnaise, a bit of curry, salt, and mix well until smooth.
  7. Using a small spoon, fill the eggs with the mushroom mixture. Garnish with finely chopped chives.
