Instructions
- Boil the quail eggs for 4 minutes, then cool and peel them.
- Heat a small amount of oil in a pan and sauté the peeled garlic clove for a couple of minutes.
- Meanwhile, finely chop the onion. Add it to the pan and cook over low heat until translucent.
- While the onion is cooking, clean the mushrooms, wash them, and pat them dry with a clean cloth. Finely chop the mushrooms and add them to the pan with the onion. Season with salt and sauté over medium heat, stirring occasionally and adding a bit of water if necessary to prevent burning (about 15 minutes).
- Meanwhile, cut the eggs in half, remove the yolks, and place them in a bowl. Mash the yolks with a fork.
- When the mushrooms are cooked, remove the garlic and add the contents of the pan to the bowl with the yolks. Add mayonnaise, a bit of curry, salt, and mix well until smooth.
- Using a small spoon, fill the eggs with the mushroom mixture. Garnish with finely chopped chives.
