Tomato soup

Ingredients (4 servings):

  • Tomato pulp400 g
  • Pasta160 g (small format)
  • Flour – 20 g
  • Butter (unsalted) – 20 g
  • Milk/Heavy cream – 120 g
  • White bread – to taste
  • Grated aged cheese – to taste
  • Basil – to taste
  • Salt – to taste
  • Black pepper (ground) – to taste

Tomato soup

Ingredients (4 servings):

  • Tomato pulp400 g
  • Pasta160 g (small format)
  • Flour – 20 g
  • Butter (unsalted) – 20 g
  • Milk/Heavy cream – 120 g
  • White bread – to taste
  • Grated aged cheese – to taste
  • Basil – to taste
  • Salt – to taste
  • Black pepper (ground) – to taste

Instructions

  1. Melt the butter in a saucepan over low heat.
  2. Add the flour and cook, stirring continuously with a whisk, until it turns golden.
  3. Pour in 1 liter of water and bring to a boil. Add the tomato pulp and bring to a boil again. Season with salt, add the pasta, and cook according to the package instructions.
  4. Meanwhile, cut the bread into cubes and toast them in a pan.
  5. Once the pasta is cooked, turn off the heat, add the basil leaves, and pour in the milk or cream. Mix well and let the soup rest for 5-10 minutes.
  6. Serve with the toasted bread cubes, a sprinkle of black pepper, and optionally, some grated cheese.
