Tomato soup
Ingredients (4 servings):

Tomato pulp
– 400 g

Pasta
– 160 g (small format)

Flour – 20 g

Butter (unsalted) – 20 g

Milk/Heavy cream – 120 g

White bread – to taste

Grated aged cheese – to taste

Basil – to taste

Salt – to taste

Black pepper (ground) – to taste

Black pepper (ground) – to taste
Instructions
- Melt the butter in a saucepan over low heat.
- Add the flour and cook, stirring continuously with a whisk, until it turns golden.
- Pour in 1 liter of water and bring to a boil. Add the tomato pulp and bring to a boil again. Season with salt, add the pasta, and cook according to the package instructions.
- Meanwhile, cut the bread into cubes and toast them in a pan.
- Once the pasta is cooked, turn off the heat, add the basil leaves, and pour in the milk or cream. Mix well and let the soup rest for 5-10 minutes.
- Serve with the toasted bread cubes, a sprinkle of black pepper, and optionally, some grated cheese.
