Potato gnocchi

Ingredients (2 servings):

  • Potatoes500 g
  • Flour150 g
  • Eggs – 1/2 (lightly beaten)
  • Salt – to taste

Instructions

  1. Place the potatoes in a pot and cover them with water. Boil the potatoes over medium heat until they are cooked through (about 40 minutes).
  2. Once the potatoes are cooked, let them cool and then peel them.
  3. In a large bowl, mash the potatoes with a fork or a potato masher.
  4. Add the sifted flour, the lightly beaten egg, and a couple of pinches of salt. Mix well with a fork, then knead with your hands until you have a smooth dough. If the dough remains sticky, add a bit more flour.
  5. Roll the dough into logs about 1-1.5 cm (about 1/2 inch) thick, then cut the logs into 1-1.5 cm (about 1/2 inch) pieces and shape them into balls. You can make ridges with a fork or a gnocchi board, but I usually leave them plain.
  6. Place the gnocchi on a plate or clean cloth, generously dusting them with flour to prevent sticking.

To cook the gnocchi, place them in boiling salted water and remove them with a slotted spoon when they start to float to the surface.
