Instructions
- Place the potatoes in a pot and cover them with water. Boil the potatoes over medium heat until they are cooked through (about 40 minutes).
- Once the potatoes are cooked, let them cool and then peel them.
- In a large bowl, mash the potatoes with a fork or a potato masher.
- Add the sifted flour, the lightly beaten egg, and a couple of pinches of salt. Mix well with a fork, then knead with your hands until you have a smooth dough. If the dough remains sticky, add a bit more flour.
- Roll the dough into logs about 1-1.5 cm (about 1/2 inch) thick, then cut the logs into 1-1.5 cm (about 1/2 inch) pieces and shape them into balls. You can make ridges with a fork or a gnocchi board, but I usually leave them plain.
- Place the gnocchi on a plate or clean cloth, generously dusting them with flour to prevent sticking.
To cook the gnocchi, place them in boiling salted water and remove them with a slotted spoon when they start to float to the surface.
