Creamy mushroom soup

Ingredients (2 servings):

  • Champignon mushrooms250 g
  • Potatoes200 g
  • Vegetable broth – 500 ml
  • Onion – 0.5 (50 g)
  • Milk – 50 ml
  • Extra virgin olive oil – to taste
  • Parsley – to taste
  • Black pepper (ground) – to taste

Creamy mushroom soup

Ingredients (2 servings):

  • Champignon mushrooms250 g
  • Potatoes200 g
  • Vegetable broth – 500 ml
  • Onion – 0.5 (50 g)
  • Milk – 50 ml
  • Extra virgin olive oil – to taste
  • Parsley – to taste
  • Black pepper (ground) – to taste

Instructions

  1. Clean the mushrooms and slice them thinly.
  2. Peel the potatoes and cut them into cubes.
  3. Clean and finely chop the onion. Heat a bit of olive oil in a pot and sauté the onion over low heat until softened.
  4. Add the potatoes and mushrooms, and sauté over medium heat for a couple of minutes, stirring frequently.
  5. Pour in the vegetable broth, bring to a boil, then cover and simmer for 20 minutes.
  6. Meanwhile, wash and chop the parsley.
  7. Once the vegetables are tender, remove the pot from heat. Pour in the milk and stir well.
  8. Use an immersion blender to blend the soup until smooth. If the consistency is too thin, return the pot to the stove and simmer until it thickens to your liking.
  9. Add the chopped parsley and season with black pepper. Stir well.
