Instructions
- Clean the bell peppers and cut them into fairly large pieces. Place them in a blender and blend until they are finely chopped.
- Heat a bit of olive oil in a pan and sauté the peeled garlic clove.
- Add the blended bell peppers to the pan and sauté over medium heat for a couple of minutes.
- Then add the tomato pulp to the pan, add a bit of water, and salt. Stir well. Bring the sauce to a boil, then reduce the heat and simmer for 20-30 minutes, stirring occasionally and adding more water if needed to prevent the sauce from drying out.
- While the sauce is cooking, bring a pot of water to a boil for the pasta. When the water starts to boil, salt it and cook the pasta according to package instructions.
- When the pasta is cooked, remove the garlic from the pan with the bell pepper sauce, drain the pasta, and transfer it to the pan. Toss over medium heat for a couple of minutes, stirring continuously to coat the pasta with the sauce.
