Potato casserole with ham

Ingredients (4 servings):

  • Potatoes500 g
  • Cooked ham200 g
  • Tomatoes100 g
  • Eggs – 2
  • Heavy cream – 100 g
  • Scamorza cheese – 50 g
  • Salt – to taste
  • Black pepper (ground) – to taste

Potato casserole with ham

  • Potatoes500 g

  • Tomatoes100 g
  • Eggs – 2
  • Heavy cream – 100 g
  • Scamorza cheese – 50 g
  • Salt – to taste
  • Black pepper (ground) – to taste

Instructions

Note: I use a blender, but you can use a grater and a knife. It's simply faster to use a blender :)

  1. Preheat the oven to 180°C/350°F (160°C/320°F for a fan-assisted oven).
  2. Peel the potatoes, roughly chop them, and blend them in the blender. Transfer to a large bowl and remove any excess liquid.
  3. In a separate small bowl, whisk together the eggs, cream, salt, and pepper. Add this mixture to the potatoes and mix well.
  4. Spread half of the potato mixture in a baking dish, pressing it down lightly.
  5. Blend the ham and spread it evenly over the potatoes.
  6. Slice the tomatoes thinly and arrange them on top of the ham.
  7. Add the remaining potatoes to the dish, spreading them evenly. Bake for 50 minutes (or 40-45 minutes in a fan-assisted oven).
  8. After baking, sprinkle the grated scamorza cheese over the top and broil for an additional 5-10 minutes, until the cheese turns golden and bubbly.
  9. Let the casserole cool slightly before serving.
