Potato casserole with ham
Ingredients (4 servings):

Potatoes
– 500 g

Cooked ham
– 200 g

Tomatoes
– 100 g

Eggs – 2

Heavy cream – 100 g

Scamorza cheese – 50 g

Salt – to taste

Black pepper (ground) – to taste

Instructions
Note: I use a blender, but you can use a grater and a knife. It's simply faster to use a blender :)
- Preheat the oven to 180°C/350°F (160°C/320°F for a fan-assisted oven).
- Peel the potatoes, roughly chop them, and blend them in the blender. Transfer to a large bowl and remove any excess liquid.
- In a separate small bowl, whisk together the eggs, cream, salt, and pepper. Add this mixture to the potatoes and mix well.
- Spread half of the potato mixture in a baking dish, pressing it down lightly.
- Blend the ham and spread it evenly over the potatoes.
- Slice the tomatoes thinly and arrange them on top of the ham.
- Add the remaining potatoes to the dish, spreading them evenly. Bake for 50 minutes (or 40-45 minutes in a fan-assisted oven).
- After baking, sprinkle the grated scamorza cheese over the top and broil for an additional 5-10 minutes, until the cheese turns golden and bubbly.
- Let the casserole cool slightly before serving.
