Pappa al pomodoro
Ingredients (2 servings):

Peeled tomatoes
– 300 g

Stale white bread
– 150 g

Vegetable broth – 500 ml

Garlic – 1 clove

Extra virgin olive oil – to taste

Salt – to taste

Black pepper (ground) – to taste

Instructions
- Heat the vegetable broth.
- Meanwhile, slice the bread. When the broth is hot, add the bread to it and let it soak. Stir occasionally and mash the bread with a fork to help it absorb the broth better.
- While the bread is soaking, heat a bit of oil in a pot and sauté the peeled garlic.
- Add the tomatoes, a pinch of sugar, and a bit of water to the pot. Cook over medium heat, stirring occasionally and mashing the tomatoes, for 20 minutes.
- Remove the garlic from the pot and add the soaked bread with the broth. Mix well, cover the pot with a lid, and cook over low heat for 20-25 minutes, stirring often and mashing the bread until you get a fairly homogeneous mixture.
- Remove from heat, add the chopped basil leaves, salt, and pepper to taste, and mix well.
