Pappa al pomodoro

Ingredients (2 servings):

  • Peeled tomatoes300 g
  • Stale white bread150 g
  • Vegetable broth – 500 ml
  • Garlic – 1 clove
  • Extra virgin olive oil – to taste
  • Sugar – to taste
  • Salt – to taste
  • Black pepper (ground) – to taste
  • Basil – to taste

  • Peeled tomatoes300 g
  • Stale white bread150 g
  • Vegetable broth – 500 ml
  • Garlic – 1 clove
  • Extra virgin olive oil – to taste
  • Sugar – to taste
  • Salt – to taste
  • Black pepper (ground) – to taste
  • Basil – to taste

Instructions

  1. Heat the vegetable broth.
  2. Meanwhile, slice the bread. When the broth is hot, add the bread to it and let it soak. Stir occasionally and mash the bread with a fork to help it absorb the broth better.
  3. While the bread is soaking, heat a bit of oil in a pot and sauté the peeled garlic.
  4. Add the tomatoes, a pinch of sugar, and a bit of water to the pot. Cook over medium heat, stirring occasionally and mashing the tomatoes, for 20 minutes.
  5. Remove the garlic from the pot and add the soaked bread with the broth. Mix well, cover the pot with a lid, and cook over low heat for 20-25 minutes, stirring often and mashing the bread until you get a fairly homogeneous mixture.
  6. Remove from heat, add the chopped basil leaves, salt, and pepper to taste, and mix well.
