Zucchini fritters

Ingredients (1 serving):

  • Zucchini1 (175 g)
  • Flour50 g
  • Eggs – 1
  • Dill – to taste
  • Chives – to taste
  • Extra virgin olive oil – to taste
  • Salt – to taste
  • Low-fat yogurt – for serving
  • Black pepper (ground) – for serving

Zucchini fritters

Ingredients (1 serving):

  • Zucchini1 (175 g)
  • Flour50 g
  • Eggs – 1
  • Dill – to taste
  • Chives – to taste
  • Extra virgin olive oil – to taste
  • Salt – to taste
  • Low-fat yogurt – for serving
  • Black pepper (ground) – for serving

Instructions

  1. Wash and trim the zucchini, then grate them using a coarse grater.
  2. Wash, dry, and finely chop the dill and chives.
  3. In a bowl, mix the grated zucchinis with the flour, egg, herbs, and a pinch of salt.
  4. Add a tablespoon of olive oil and mix well.
  5. Heat a bit of oil in a skillet and spread it over the surface of the pan.
  6. Spoon the batter into the skillet and cook over low heat. When the bottom of the fritter is golden brown (~3 minutes), gently flip it and cook until the other side is golden as well (2-3 minutes).
  7. Serve the zucchini fritters with low-fat yogurt (or sour cream) and a sprinkle of black pepper.
