Rice with shrimp
Ingredients (1 serving):

Peeled shrimp
– 80 g

Rice
– 50 g

Tomatoes
– 150 g

Avocado
– 60 g

Soy sauce – 1 tablespoon (~15 ml)

Raw cane sugar – 1 tablespoon (~15 g)

Extra virgin olive oil – to taste

Salt – to taste
Rice with shrimp

Instructions
- Bring a pot of water to a boil for the rice. Once boiling, salt the water and cook the rice, stirring occasionally. When the rice is cooked, drain it.
- Meanwhile, cut the tomatoes into cubes.
- Heat a little oil in a skillet and sauté the tomatoes and shrimp for a few minutes, stirring occasionally.
- Add the soy sauce and raw cane sugar. Mix well and continue cooking until the shrimp are cooked through.
- In the meantime, peel and dice the avocado.
- When the rice is cooked, add it to the skillet and stir-fry for a couple of minutes, mixing frequently.
- Remove from heat, add the avocado, mix well, and serve.
