Syrniki

Instructions
- In a deep bowl, mash the cottage cheese with a fork.
- Add the egg and sugar to the cottage cheese and mix well.
- Sift 60 grams of flour into the bowl and thoroughly. If the mixture is too runny, add more flour in small increments until the dough holds together.
- Dust the work surface with flour.
- Take small portions of the dough from the bowl and form them into balls about 5-7 centimeters (2-3 inches) in diameter. Coat each ball in flour, then slightly flatten it.
- Heat some oil in a skillet. Fry the syrniki over low heat, covering the skillet with a lid if desired, until they are golden brown on each side.
