Syrniki

Ingredients (2 servings):

  • Cottage cheese200 g

  • Flour – 60 g + as needed
  • Sugar – 1 tablespoon (~15 g)
  • Sunflower oil – to taste

Syrniki

  • Eggs – 1
  • Flour – 60 g + as needed
  • Sugar – 1 tablespoon (~15 g)
  • Sunflower oil – to taste

Instructions

  1. In a deep bowl, mash the cottage cheese with a fork.
  2. Add the egg and sugar to the cottage cheese and mix well.
  3. Sift 60 grams of flour into the bowl and thoroughly. If the mixture is too runny, add more flour in small increments until the dough holds together.
  4. Dust the work surface with flour.
  5. Take small portions of the dough from the bowl and form them into balls about 5-7 centimeters (2-3 inches) in diameter. Coat each ball in flour, then slightly flatten it.
  6. Heat some oil in a skillet. Fry the syrniki over low heat, covering the skillet with a lid if desired, until they are golden brown on each side.
