Crêpes
Ingredients (2 servings):

– 150 g

Water – 170 ml

Extra virgin olive oil – 1 tbsp

Crêpes

Instructions
- In a large bowl, whisk together the egg, milk, a pinch of salt, and a couple of pinches of sugar.
- Add the flour and mix until the batter is smooth.
- Stir in the water and oil, mixing well until fully combined.
- Heat a non-stick pan over high heat, then reduce to medium.
- Pour about half a ladle of batter into the pan, tilting the pan to spread the batter evenly. When bubbles form on the surface of the crêpe, flip it and cook for about 30 seconds on the other side.
- Stack the cooked crêpes on a plate, optionally adding a small amount of butter to each to keep them soft.
