Charred tomato pesto
Ingredients (4 servings, 300 g):

Tomatoes
– 500 g

Pine nuts – 20 g

Parmesan – 20 g

Extra virgin olive oil – 20 g

Garlic – (optional) 1 clove

Basil – 10-15 leaves

Dried oregano – to taste

Salt – to taste

Sugar – to taste
Charred tomato pesto

Instructions
- Preheat the oven to 250°C/480°F (230°C/450°F for a convection oven).
- Wash and dry the tomatoes. Cut them in half.
- Place the tomatoes cut-side up on a baking sheet lined with parchment paper. Sprinkle with salt, sugar, and dried oregano. Roast in the preheated oven for 30 minutes, or until the tomatoes are slightly charred.
- Transfer the tomatoes to a blender bowl. Add the grated Parmesan cheese, olive oil, basil leaves, pine nuts, and the peeled garlic clove (if using). Blend until smooth.
