Charred tomato pesto

Ingredients (4 servings, 300 g):

  • Tomatoes500 g
  • Pine nuts – 20 g
  • Parmesan – 20 g
  • Extra virgin olive oil – 20 g
  • Garlic – (optional) 1 clove
  • Basil – 10-15 leaves
  • Dried oregano – to taste
  • Salt – to taste
  • Sugar – to taste

Charred tomato pesto

Ingredients (4 servings, 300 g):

  • Tomatoes500 g
  • Pine nuts – 20 g
  • Parmesan – 20 g
  • Extra virgin olive oil – 20 g
  • Garlic – (optional) 1 clove
  • Basil – 10-15 leaves
  • Dried oregano – to taste
  • Salt – to taste
  • Sugar – to taste

Instructions

  1. Preheat the oven to 250°C/480°F (230°C/450°F for a convection oven).
  2. Wash and dry the tomatoes. Cut them in half.
  3. Place the tomatoes cut-side up on a baking sheet lined with parchment paper. Sprinkle with salt, sugar, and dried oregano. Roast in the preheated oven for 30 minutes, or until the tomatoes are slightly charred.
  4. Transfer the tomatoes to a blender bowl. Add the grated Parmesan cheese, olive oil, basil leaves, pine nuts, and the peeled garlic clove (if using). Blend until smooth.
